Sierra Nevada Celebration Ale represents a time honored tradition of brewing a special beer for the holiday season. There are generous portions of barley malts and fine whole hops of several varieties, creating a brew with a full, rich and hearty character. In Spring 2006, Sierra Nevada released their newest draft speciality, Torpedo Ale. Everything in the recipe is the same as Celebration, but the technique used for the dry hopping is considerably different. The first torpedo that we made used the same varieties of hops during the dry hopping processes so we could see how the final beer compared to the traditional style of dry hopping (dry hops in perforated mesh bags to the secondary fermentation process) for future batches. By doing this, we wanted to compare the hop compounds that are extracted through the traditional methods versus the torpedo technique we developed. We did this on a rather large scale, 200 barrels US to be exact and after tasting the final beer we were not about to dump this fine tasting beverage. Therefore, we made it available to the beer enthusiasts like yourself.Due to popular demand we have brewed another batch of Torpedo Ale for our fellow hopheads. This batch was done with different hops (Chinook & Cascade) than the first torpedo, so in the future we are planning on using this beer as great way to explore the aromatics and flavors of different hop varieties. At Sierra Nevada, we strive to make very balanced beers and the grist bill for such a high hopped ale should reflect that of a Celebration Ale. We have talked about the use of different specialty malts in the future so that each batch will have the uniqueness that our customers enjoy. The first two Torpedo Ales and the Celebration Ale are American Style IPAs by the given guidelines. The Celebration Ale is 68 IBUs and 6.7 % ABV. The torpedo #1 was 64 IBUs and 6.8% ABV while the second was 66 IBUs and 6.8% ABV.
